12 figs (I like purple figs as it gives a rosy colored sauce but green are fine)
125 gr Greek feta
Bunch of fresh thyme
Preheat oven to 160c
With a knife slice off the stalk enough to expose a little of the fig flesh.
Stick a clean finger down the center taking care not to split the fig open. You are making a small well to fill with the crumbled feta. If the figs are a little too green don’t worry place a pinch of brown sugar in the base of each well, this will make the fig flavor pop. Push a little feta into each fig but don’t pack it in. Place in a ceramic baking dish. Scatter with some of the thyme don’t go too light on the thyme. Drizzling with balsamic and gen olive oil and freshly grind some pepper over the top. Place in oven an cook for 30 minutes.
Serves 4 as a starter
